Honoring Our Founder: Martha Rubio’s Journey

Founded by Martha Rubio, Tacos Jalisco began with a dream, determination, and a love for authentic Mexican cuisine. Originally from Unión de Tula, Jalisco, Mexico, Marta brought her passion and traditions to California, opening Tacos Jalisco in Vallejo in 1986. Her dedication has shaped the restaurant into a beloved community gathering place for generations.

Martha Rubio’s commitment to her customers and community was recognized in 2018 when she received the Spirit of Solano Award from the Solano Hispanic Chamber of Commerce. This honor celebrated her entrepreneurship, resilience, customer service, and contributions to the community. Today, Tacos Jalisco continues to carry forward those same values through every meal served.
